2 bunches of kale

1 cubed avocado

Preparation- Remove the center ribs and stems from kale. Stack the leaves and then slice them thinly into ribbons. Drizzle it with some oil and slightly sprinkle with white pepper and sea salt. Now, use your hand to massage the pepper and oil into the kale leaves. Let it stay for about 5-10 minutes.

After this, add pumpkin seeds, blueberries and goji berries to it and toss for mixing.

2. Gazpacho

What you need-

1 cucumber which is halved and seeded. Make sure that it is not peeled.

4 tomatoes

2 cored and seeded red bell pepper

3 minced cloves of garlic

1 red onion

3 cups of tomato juice

¼ cup olive oil

¼ cup white vinegar

½ tbsp. Kosher salt

1 tbsp black pepper

Preparation- For this raw food recipe, chop the bell peppers, cucumber, red onion and tomatoes into small cubes. Now, take each of these vegetables separately and pulse them in a food processor until they are chopped coarsely. After processing each one of them, add them together in a large bowl and then add tomato juice, garlic, olive oil, pepper, salt, and olive oil. Mix the ingredients thoroughly and let it sit in refrigerator for a while before eating.

3. Pad Thai

What you need-

1 tbsp. Fresh ginger (minced)

1 tbsp. Garlic (minced)

1 tbsp. Soya sauce

½ cup orange juice

¾ cup almond butter (raw)

2 tbsp. Honey

1/8 teaspoon cayenne pepper

Preparation- Take all these ingredients and blend them in a food processor until they are smooth. If you want the sauce to be thicker, you can increase the amount of almond butter and for thinning, increase the orange juice. After preparing the noodles, pour this sauce on it to marinate and let t sit for about 10-15 minutes. After this, top the mixture with your favourite sliced raw vegetables, like shredded carrots, grape tomatoes, sprouts, yellow and red peppers, fresh basil, mint and cilantro.

4. Mushrooms Stuffed with Raw Pesto

What you need-

15-20 button mushrooms that are washed and stemmed

Stuff the mushrooms with-

¼ cup pine nuts

½ cup walnuts

1 cup basil

3 cloves of garlic

½ cup of virgin oil

½ teaspoon sea salt

Preparation- Place the mushrooms upside down on a dehydrator tray. Take all the stuffing ingredients and blend them in a food processor. Once done, start scooping small amount of this stuffing in each mushroom. Now, dehydrate the mushrooms at 105 degree for about 4-5 hours. Serve this delicious raw food with green salad.

5. Tapioca Pudding

What you need-

1 cup of any raw nut milk

2 tbsp. Chia seeds

1 tbsp. Maple syrup

Preparation- Combine all the above mentioned ingredients, stir them thoroughly and let them sit for 1-2 hours. The seeds will plump up and you will have an amazing raw food pudding for you to tackle your diabetes.
